Great Baked Peppers Stuffed With Goat Cheese

Hey all,
This is one of those amazingly quick, amazingly easy recipes, which will produce really nice, light and tasty brunch food - in under 20 minutes! Could be perfect for a lazy Saturday morning… just try it.
So lets get started, all you needĀ is:

Ingredients:
(For 4 dishes)

  • 6 small red peppers
  • 1 cup soft goat cheese
  • 1 egg yolk
  • 1 stem thyme (or 1 tablespoon dried thyme)

  1. Heat oven up to 400 F (200 C)
  2. UsingĀ olive oil, oil a baking dish
  3. In a bowl, mix cheese, egg yolk and thyme together. Add some salt and pepper.
  4. Wash peppers and cut in half lengthwise. Loose all the seeds and white parts.
  5. Stuff each half of pepper with 2 tablespoons of goat cheese. Arrange peppers in baking dish, cheese side up.
  6. Bake for 10-12 minutes, until peppers are golden brown. Serve while still hot.
